Why I love our CSA shares... let me count the ways. Last week, I shared how joining Fox Creek Farm CSA helped my family eat better as we incorporate more vegetables in our meals. If you missed that and want to read about it - here's the link.
Reason #2 is discovering new vegetables. Before CSA, I felt we were in a food rut. Do you feel that way too? Each week, we sit down and talk about making the same meals and end up eating the same kind of vegetables over and over again. Our vegetable repertoire was pretty much limited to salad greens, carrots, peas, and corn.
Since we start getting our shares in June, we have been eating and trying out new vegetables that are in season like Garlic Scrapes and Swiss Chard. We learn new ways of cooking these veggies and end up loving them!
Our generous CSA share last week consisted of:
- Mesclun salad mix
- Swiss Chard
- Arugula
- Garlic Scapes
- Carrots
- Summer Squash
CSA Recipe of the week is Easy Stuffed Summer Squash
